*****APPLE FRITTERS************

PREP TIME= 30 min COOK TIME= 30 min

INGREDIENTS:
6-granny Smith apples(sweet,grainy apples with slightly lemony overtones & wrinkled skins)
2-Tablespoons powered sugar
1/3 cup cognac or rum
grated lemon zest
A light batter made from flour & water
Oil for frying

Prep: Peel & core apples, then cut them into 1/4" rings crosswise, so as to obtain a great number of doughnuts. Put the rings in a bowl & sprinkle them with the sugar,cognac & zest. Turn them carefully to avoid breaking them & let sit for 1 hour, turning them once or twice more.

Shortly before you plan to go to the table, drain the apples, dip them in the batter, & fry in abundant oil or rendered lard until they are golden brown. **If you want them to be sweet, dust lightly with confectioner's sugar.

***********BROWNIES******************
1/4 Cup BUTTER, MELTED & COOLED
4 EGGS BEATEN
1 Cup SUGAR
1- 1/2 Cup CHOCOLATE SYRUP
1 Cup PLUS 1 T. ALL PURPOSE FLOUR

Prep: Combine 1st 4 ingredients:blend well. Now mix in flour;spread in a greased jelly-roll pan. Bake at 350' for 25 minutes; cool. Spread with frosting; cut into squares or diagonally into diamonds. Makes 3 dozen...

*****FROSTING*******
6t BUTTER
6t MILK
1 1/2 c SUGAR
2/3 CHOCOLATE CHIPS
Bring butter, milk & sugar to a rolling boil in a small saucepan. Stir constantly. Remove from heat;stir in chocolate chips until melted & smooth....
